These banana pancakes are particularly good for the cortisol type.

When breakfast is supposed to be a bit more festive, try these banana pancakes. This variant is my favorite, they gives a great satiety and keep the blood sugar stable. Of course, you can also make them for dessert.

For 2 persons

YOU WILL NEED

PANCAKES:
  • 1 ripe banana
  • 3 eggs
  • 1 dl fat-reduced almond flour e.g. from the brand Functional Food
  • 1 dl water
  • 1 pinch of salt
  • Coconut oil for frying
CHOCOLATE SAUCE:
  • 1 teaspoon of Yacon syrup or coconut syrup
  • 1 tablespoon coconut oil, melted
  • 2 drops of good quality Stevia
  • 1 teaspoon of raw cocoa

 

HOW TO MAKE THE BANANA PANCAKES

Mash the banana thoroughly with a fork. Stir the eggs together with banana, almond flour, water, and salt, and whip thoroughly. Fry the pancakes on the pan in coconut oil.

I prefer to make them like small, chubby, American pancakes, but they are also suitable as regular pancakes.

CHOCOLATE SAUCE:

Prepare the chocolate sauce by stirring Yacon syrup or coconut syrup, melted coconut oil, Stevia and raw cocoa well together.

Serve pancakes with fresh fruit or ice cream and chocolate sauce.
